QUICK EASY VEGAN FALAFELS

 

I would have to say that falafel is definitely one of my favourite foods it’s normally a messy experience, especially  if you’re truly eating it right, with all that relish and tzatziki sauce. It’s a delicious messy heaven, most importantly good for you.

This is also a family favourite, the kids get into it at any opportunity. I’ve tried so many falafel recipes in the past, I found this recipe on the BBC website, I adjusted the recipe to get the flavour just right. 

QUICK EASY VEGAN FALAFELS

Ingredients

  • 400g can chickpeas, rinsed and drained
  • garlic clove, chopped
  • handful of flat-leaf parsley or curly parsley
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1⁄2 tsp Lemon juice
  • 2 tbsp plain flour
  • 2 tbsp olive oil
  • toasted corn tortilla bread
  • 200g tub tomato salsa, to serve
  • green salad, to serve
  • 1 small red onion, roughly chopped

 

Method

  1. Pat the chickpeas dry with kitchen paper. Tip into a food processor along with the onion, garlic, parsley, spices, flour and a little salt. Blend until fairly smooth, then shape into miniature balls.
  2. Heat the oil in a non-stick frying pan, add the burgers, then quickly fry for 3 mins on each side until lightly golden. Serve with toasted corn tortilla bread, tomato salsa and a green salad.
